Frankenspross: Microgreens from the Nuremberg region

"We completely avoid nutrient-poor substrates and synthetic fertilizers"

The start-up Frankenspross from Schwaig near Nuremberg, Germany, is more than just a supplier of microgreens—it is the result of a personal health journey. Founder and medically certified nutritionist Moritz Bußler (right) experienced firsthand how powerful nutrition can be in healing chronic conditions. This experience led him to believe that truly fresh, natural foods are the foundation of good health—and that they are hard to find. The solution: nutrient-rich microgreens from his own regional production, available for customers to harvest themselves.

Frankenspross grows its microgreens locally in the Nuremberg area. They are delivered directly or can be picked up without any long supply chains. Regionality and freshness are at the heart of the concept. "Our customers get microgreens of a quality that they would otherwise only find in their own gardens—fresh and full of nutrients," says Bußler.

Only organic seeds, organic soil, and filtered water are used. "We completely avoid nutrient-poor substrates and synthetic fertilizers." Even the packaging has been carefully considered. "The growing trays are made from recycled plastic from industrial waste, which is thus given a new, meaningful purpose."

The range currently includes peas, radishes, arugula, mustard, mizuna, amaranth, coriander, basil, and pak choi. It is continuously being expanded in consultation with customers. Production takes place indoors in a space-saving vertical farming system – temperature and humidity controlled, regardless of the season.

The main customers are currently local restaurants and health-conscious individuals. "Due to the fresh nature of the product, nationwide shipping is not logistically feasible at present, but is considered an option for the future in the health and fitness sector. This is precisely where our microgreens offer real added value, for example, through the detoxifying effect of coriander or the rapid availability of amino acids for athletes."

Quality remains, variety grows
Frankenspross plans to further expand its range and reach. New products are already in the pipeline, although the company is deliberately taking its time with development. "Like a good recipe, you need the right mix – we're working on it," concludes Bußler.
